Cheese Dip

The Cheese Dip That Will Make You Famous!

  
  Ingredients
1 8 oz. package cream cheese
2 cups grated cheddar cheese OR grated jalapeƱo jack
1 cup mayonnaise
1 small purple onion, diced (you can use chopped green onions as well or omit onions if you don’t like them)
◦Serve with Wheat Thins or Frito’s Scoops for dipping or even Veggies


Instructions
1. Place all ingredients in a shallow baking dish (a 9″ square pan or round quiche pan will be perfect!)
2. Microwave on high for about 2 minutes or until the ingredients are melted enough to stir together.
3. Stir until combined.
4. Bake at 350 for 20 minutes or until lightly browned.
5. Serve with Wheat Thins or Frito’s Scoops for dipping

Guacamole That Rocks

Raise your hand if you can make an entire meal off of a bag a chips and a bowl of guacamole!!  I am always looking for a good recipe for the yummy green goodness and I found this one in the Walmart circular last week.  I can't wait to try it!!

Last night I made the Buffalo Chicken Spaghetti and it was superb!  Definately worth the try.

Guacamole That Rocks!!
3 ripe avocados, pitted, peeled & mashed
1 can Ro-Tel original diced tomatoes & green chilis, drained
3/4 cup chopped onion ( I will probably omit this)
1 tsp lemon or lime juice
1/2 tsp salt
ground black pepper

Directions:
mix all ingredients in a bowl and season with pepper to taste

Casa Ole Green Sauce

This is some good stuff!  I could eat it with tortilla chips all day long!!  It is always a hit when I take it somewhere.  The recipe makes a huge batch.

Casa Ole Green Sauce
4 avocados
1 (16 oz) container sour cream
1 can Rotel tomatoes
1 Tbsp garlic powder
1 (4 oz) green chilis   ** I do not like green chilis so I use jalapenos instead
2 tsp salt (I omit, just cause I don't use much salt)
1 tsp lemon juice
3 oz cream cheese
Mix and blend all ingredients until smooth.

** If you use a blender like me, make sure it is a big one.  I burned up my first one making this!  A food processor might work better but I don't have one.

Corn Dip

Corn Dip

1 (8 ounce) container sour cream
1 cup mayonnaise
2 (11 ounce) cans Mexican-style corn (I used shoepeg corn and added diced fire roasted tomatoes because I couldn't find mexi-corn and I run the tomatoes through the food processor)
4 green onions, chopped
3 jalapeno peppers, seeded and minced
1 (7 ounce) can diced green chiles (I don't like green chiles so I upped the jalapenos)
1 1/4 cups shredded Cheddar cheese (I used Kroger brand nacho and taco shredded cheese)

Directions
In a medium bowl, mix together sour cream, mayonnaise, corn, green onions, jalapeno chile peppers, green chile peppers and cheese.
Ready to serve!
Very tasty with fritos

Swiss and Bacon Dip

I had this dip at a birthday party and it was wonderful. It is a Rachael Ray recipe and can also be found at Foodnetwork.com.

Swiss and Bacon Dip
Prep Time: 10 min
Cook Time: 18 min

Ingredients

8 slices center cut bacon, chopped
8 ounces softened cream cheese
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
1 1/2 cups shredded Swiss cheese, available on dairy aisle
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped

Directions
Preheat oven to 400 degrees F.
Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels. In a mixing bowl, combine cream cheese, mayonnaise, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping. Variation: Swiss and Bacon Dip with Horseradish - Stir in 2 rounded teaspoons prepared horseradish when combining cheese and bacon.
