Roasted Garlic Cauliflower

I made this for the first time today and it was so yummy and so easy.  I am going to try it with broccoli and maybe carrots for something different.  I'll let you know how it turns out.

Cook Time: 25 Minutes Ready In: 40 Minutes
6 servings

INGREDIENTS:
2 tablespoons minced garlic
3 tablespoons olive oil
1 large head cauliflower, separated into florets
1/3 cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh
parsley

DIRECTIONS:
1. Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish.
2. Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish.
3. Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown.

Yummy Refreshing Summer Drink

Here is a little drink I came up with since starting weight watchers.  It is yummy and shouldn't cost you any points!

Diet Sprite or 7 UP
frozen fruit

Put desired amount of frozen fruit in your cup (I use Walmart strawberry, blackberry, blueberry, raspberry mix) and pour in diet Sprite or 7UP.  Enjoy!

Easy Breakfast Casserole

I first had this at a luncheon at work.  It was go yummy and so easy.  Some people  put  poppyseeds but I don't.  My though is. . . who needs them!!  Enjoy!

Ingredients:
2 cans crescent rolls
1 package cream cheese (8 oz)
1 pound sausage

Brown sausage and drain.  Mix softened cream cheese and sausage.  Roll out both cans of crescents pressing seams together.  I always put mine in a 9X9 pan (I spray with Pam to make sure it doesn't stick).  Spoon in mixture and pull sides up and over mixture.  Press seams together.  Bake at 350 degrees until golden brown. 
Tastes really good on the first day or the second day.
