Broccoli Salad

I got this recipe from my sister.  I forgot how good it was until last weekend when I made it for a funeral luncheon.  I decided to make it tonight for our church luncheon. . . .can't wait til tomorrow to eat some!

Broccoli Salad
1 large head broccoli
1 large onion (I use green onions instead) cut in rings
1/2 cup sunflower seeds
1 lb fried bacon (I cheat and use the already cooked bacon found in the salad section at the store)
8 oz shredded cheddar cheese (I use whatever I have)
dressing:
1 cup mayonnaise
1/2 cup sugar
2 Tbsp vinegar

Cut up broccoli and mix with onion, sunflower seeds and bacon.  Put mayo, sugar and vinegar in a small saucepan and bring to a boil.  Pour over salad while still warm and mix well.  Eat.  You will thank me later!!

Casa Ole Green Sauce

This is some good stuff!  I could eat it with tortilla chips all day long!!  It is always a hit when I take it somewhere.  The recipe makes a huge batch.

Casa Ole Green Sauce
4 avocados
1 (16 oz) container sour cream
1 can Rotel tomatoes
1 Tbsp garlic powder
1 (4 oz) green chilis   ** I do not like green chilis so I use jalapenos instead
2 tsp salt (I omit, just cause I don't use much salt)
1 tsp lemon juice
3 oz cream cheese
Mix and blend all ingredients until smooth.

** If you use a blender like me, make sure it is a big one.  I burned up my first one making this!  A food processor might work better but I don't have one.

Hamburger Soup

I got this recipe from Mrs. H at Heritage Schoolhouse but adapted it to something that my very picky veggie eater hubby would like.  It was awesome.  My Dad had dinner with us that night and he really enjoyed it too.  He suggested putting it over rice.  Sounded good to me!
Hamburger Soup8 servings

oil
½ onion, chopped fine
1 pound ground beef
2 cans Rotel tomatoes (I used one but will probably use more next time)
1 can corn, drained2 cans diced potatoes
1 bag frozen broccoli
1 jar mushrooms
1 small can tomato sauce
2 cups chicken stock
pepper, garlic, chili powder, and seasoning salt to taste
cheddar cheese, grated

Cook onions in oil until tender; add ground beef and cook until beef is done. Place onions and beef in a large stock pot (or crock pot). Add tomatoes, corn, potatoes, broccoli, mushrooms, tomato sauce, chicken stock, and seasonings. Simmer until potatoes and broccoli is tender.
I had intended to make jalapeno cornbread to go with it but that didn't happen!
